Chicken Time!!


Thirteen Things about Dawn!


I have a thing for chicken, it's probably 70% of what I cook at home. So it was suggested I do 13 chicken recipes...thats a LOT of recipes though lol So I'll link to some and fill in my favorite home recipes :)

1. Baked Chicken and Rice

6 boneless skinless chicken breasts
2 cups rice
2 cans cambell's Cream of Chicken Soup
2 1/2 cans water
Pam


Spray 9 x 12 in casserole dish with Pam. Mix soup and water together. Pour soup mixture into dish. Add rice and stir. Lay chicken breast in mixture and salt and pepper each piece. Bake for 1 hour at 375. Check throughout hour and stir rice. You might have to add more water if it looks like its drying out but isn't done yet. By the time the rice is done, the chicken is too!

2. Poppyseed Chicken

6 boneless skinless chicken breasts
2 cans Cambell Cream of Chicken Soup
1 small sour cream (8 oz)
Ritz Crackers (1-2 sleeves)
1/4 cup butter/margarine----or you can use the spray butter (its easier biggrin )

Pam


Spray 9 x 12 in casserole dish with Pam. Boil chicken and cut it into cite size pieces. Salt and pepper and put in bottom of dish. Mix together cream and soup. Pour mixture over chicken. Crumble the Ritz crackers and sprinkle on top. (We like a good thick layer.) Melt butter and sprinkle over crackers (or spray crackers with spray butter). Sprinkle poppyseed on top. Bake at 350 until mixture bubbles. (Ingredients don't need to cook, just heat all the way through.)

This one you can make in the morning or the night before and stash in the fridge.

3. Beer Battered Chicken

chicken (wings, breasts, boneless-doesn't matter)
vegetable oil
3 to 4 tablespoons of the Original Bisquick mix
1 cup Original Bisquick mix
1/2 beer
1 large egg
1/2 teaspoon salt

Go ahead and heat up your oil in a fryer or pan. Lightly coat chicken with Bisquick mix. In a seperate bowl mix together remaining ingredients (if it's too thick add more beer). Dip fish into the batter and let the excess drip back into the bowl. Cook chicken in oil till it's done (time kinda varies on size and such. just make sure its all white-no pink). Spoon it out with a slotted spoon and drain on paper towels.

4. Chicken Pot Pie

1/2 cup butter
3 tbl flour
2 cups chicken broth
1 tsp salt
3 cups chicken (broiled and cut in bite size pieces)
1 1/2 cups potatoes (diced and boiled)
biscuit mix

Spray casserole dish with Pam. Boil chicken and cut in bite size pieces. Melt butter, blend in flour then gradually add broth. Cook and stir constantly till thick. Add remaining ingredients and heat Pour into casserole dish. Prepare biscuit miz (or pop open a can) and roll flat to about 1/2 inch thick. Cut into strips and place on top of hot chicken mix. Backe on 450 for 12-15 minutes or until biscuit is done.

5. Chicken and Rice (soup kind)

6 boneless skinless chicken breast
2 cups rice
2 cans Campbell's chicken broth
or
1 box Swanson chicken broth (the easier choice)

Boil chicken and save broth. Add the box (or can) or broth to the mix to make it richer (is that a word?). Cut chicken into bite size pieces. Bring broth to a boil. Put rice in broth and reduce heat to low. Cook rice for at least 20 minutes (until tender) on low with lid. Add chicken. You may add water or more broth to make it soupier if needed.

Oh my! That is a whole lot of chicken! I'm hungry just reading these recipes...I have a big fat nekked chicken in my fridge, guess what is going to happen to him on Saturday night LOL. But which recipe do I choose - too many great choices Dawn.
